Well friends, I think we skipped fall and went straight to winter. In celebration of the cold and wet, we are doing something special for November. Swift is teaming up with Beija Flor to host a Hot Pot Outside Social Ride.
As we are all well-aware, the weather in Seattle has shifted. We’re going to get damp and chilly and what better way to combat that than hopping on your bike with buddies, ripping around a little, getting some views, and finishing the ride with Hot Pot OUTSIDE. It’s a traditional Chinese communal meal, consisting of a variety of hot simmering stock and a variety of ingredients to cook in the stock. It’s like an incredibly warm hug in your belly.
For this round we’ll keep it vegetarian and provide broth, hot water, dipping sauces and condiments, napkins, just about everything. All YOU need to bring is yourself, your bike, chopsticks, a bowl to hold your food in, and your favorite vegetarian hot pot ingredients. We suggest swinging by Uwajimaya or H-Mart to pick up some food to cook in there like mushrooms, yams, tofu, noodles - and whatever else you’d like to add in as well.
What you need to bring: Bike Proper riding gear Favorite dipping ingredient (recommendations below) Bring your own bowl Chopsticks/utensil Drink of choice Water (hot pot makes you thirsty) Tupperware for take home goodies Empty belly
Hot Pot Recommendations: (washed & Prepped) Mushrooms - Enokitake (golden needle mushrooms), oyster mushrooms, seafood mushroom, shimeji, shiitake.
Tofu - Fried tofu, yuba sheet, yuba knots, tofu skin
Crunchy vegetables – bamboo shoots, lotus root, cauliflower, radish, broccoli, carrot
Starchy vegetables – squash, potato, sweet potato, taro root, Yams.
Leafy greens – napa cabbage, pea shoots, baby bok choy, Chinese broccoli, yu choy, Swiss chard
Other fun vegetables – winter melon, celtuce, bean sprouts.
